今天中午用自己昨天刚买的鸡胸脯肉、洋葱和胡萝卜做成了偶独创的新版芙蓉鸡片。味道不错。
具体步骤不详述了。点几个关键tips:
1. 鸡片要用料酒、生粉、胡椒粉、五香粉、盐和麻油腌5-8分钟。一定要放一点盐会比较有鲜味。如果全靠最后放盐,不容易入味。
2. 最后别忘了用水淀粉勾芡一下,色泽就比较油亮好看。但是不能太稠;否则,就成“烂糊炒鸡片”了。
